The Hotel del Coronado will debut its new culinary concept, Veranda, this April in the space formerly known as Sheerwater.
Veranda captures the Del’s past as it draws inspiration from the historic wraparound veranda. It also pays homage to its Southern California roots through a cuisine focused on locally sourced ingredients and partnerships.
“Veranda is designed to be a gathering place where guests can relax, connect and enjoy exceptional food with breathtaking views,” said Brian Archibald, the executive chef. “We’ve created a menu that complements the restaurant’s inviting atmosphere, offering both familiar favorites and exciting new flavors.”

Another restaurant concept, Nobu Del Coronado, is set to open in May.
Historic charm
As part of the hotel’s extensive $550 million revitalization project, Veranda’s contemporary restaurant design embraces the Hotel del Coronado’s 1888 inception.
Then, an iconic 20-foot-wide veranda encircled the hotel building, inviting visitors to an 1,800 foot continuous walk with views of the Pacific Ocean.
The restaurant’s oceanfront setting and garden-inspired design fits a total of 159 seats, including 18 indoor seats, creating an intimate atmosphere that blends casual comfort with modern elegance.
California-inspired menu
Veranda will be closed for lunch, offering breakfast and dinner throughout the week.
Grilled California artichokes and broiled West Coast oysters with chorizo butter are among the starters planned for guests. Entrees include American classics with a twist like Veranda’s french dip, grilled whole red mountain trout noisette and certified angus beef steaks.
Veranda will also offer specialty nights like signature fried chicken on Wednesdays, and herb-crusted prime rib on Thursdays. Seafood boil with Maine lobster tail, Sea Cortez shrimp, and Dungeness crab will be available on Fridays.
The cocktail menu includes a California-forward wine list among other classics with a modern twist.
