Brian Archibald will be the new executive chef of the Hotel del Coronado. After the closure of the Del’s Laundry Pub, two brand new restaurants will be opening in the spring at the Del: Nobu Del Coronado and Veranda, in addition to the four existing restaurants and bars. 

Archibald will oversee culinary operations at the resort and lead the property’s culinary team across all concepts. The four concepts located on at the Del include Serẽa, Sun Deck, Babcock & Story Bar and ENO Market & Pizzeria – and soon, Nobu and Veranda. 

A graduate from California Culinary Academy in San Francisco, Archibald has over 25 years of hospitality experience. He’s worked in Michelin-starred kitchens alongside several powerhouse chefs, like Daniel Boulud and Alex Lee. 

Archibald has served many different positions including sous chef, executive chef and director of culinary and beverage. Throughout his career, he’s led culinary teams at The Graduate Hotel, The Boulders Resort & Spa and JW Marriott Desert Ridge and more.
